Balancing Nutritional Quality & Taste, Convenience & Cost

Whole Foods Cooking Lesson #1   Overcoming Obstacles  Page Six

Blender Batter Waffles/Pancakes
Baking the Waffles
Overcoming Obstacles with Blender batter baking

Obstacle #1  Healthy food is inconvenient to prepare.
Everything goes in a blender. No mixing. or egg white beating. Easier than a box mix. Pours onto the griddle or waffle baker. Out it comes, hot, ready to eat. How simple can it be?

Obstacle #2
Healthy food takes too much time to prepare.
Five minutes for the blender. Five minutes in the baker. Can you get everyone out of bed and seated around the table faster than that?

Obstacle #3
Healthy ingredients are hard to find.
Eggs, rolled oats, brown rice, buttermilk. All standard grocery store stock. The other grains for the recipe variations are as close as your phone. See www.sunorganic.com or call 1-888-269-9888 for a catalog.

Obstacle #4
  Healthy ingredients cost too much.
Is $.35 to $.40 per waffle unreasonable? Compare with the store bought stuff.

Obstacle #5
Grain milling equipment costs too much.
Whole grain nutrition with a $30 to $40 off the shelf blender? That is considered "throw away" equipment. (If it breaks its cheaper to buy a new one than to repair it.) You don't have to have a $250 to $500 grain mill to get started.

Obstacle #6
  My family resists change.
This could be the biggest one. Good recipes make the difference. Good taste is the bottom line. Gentle and persistent patience helps overcome the mental barriers and emotional prejudices. The Creative Recipe Organizer (See Passing the Family Taste Test) has a recipe rating system inviting family participation that will help change attitudes.

Obstacle #7  Members of my family suffer from food allergies.
Alternative and optional ingredients make this a versatile recipe for those who are on restricted diets equally enjoyable for family members who may not.

Obstacle #8  I am a kitchen klutz.
This recipe is ordered by the numbers. If you are old enough to read, you can do it. It has a lot of forgiveness, too. Forgot the egg? It will still come out. Put in too much grain? Add extra liquid.

Question:  We had the pancakes (2 stage) and the family loved them!  I made one batch but they wanted more!  Can I double the batch in the blender or will I lose the "vortex"?

Answer:  Yes, you can double the batch. Some blenders can handle it. But . . . if you lose the vortex (usually happens after the batter has soaked), you will need to pour half of the batter out to reduce the volume in the final stage. Actually that will save your having to measure out the recipe twice.
