STEP #2 Prepare Liquid Ingredients for the Dough | |||

STEP #3 Sift Dry Ingredients into Medium Bowl | |||

| Add 3 Cups Whole Grain Flour (as Spelt, Kamut, Wheat) | Add 1 tsp Salt | Add 1/2 tsp Nutmeg | |

STEP #4 Combine Dry Ingredients with Eggs & Add Milk | |||

| Mix thoroughly with Whisk & Spoon | Mix to Pasty Consistency with Just Less than 1 Cup Milk. | ||

TIP: If too much liquid is added dough will become runny and flour will have to be added. |

STEP #5 Boil Noodles in Spaghetti Cooker (Double Boiler) | |||

| Add 1/2 tsp Salt to Boiling Water | Place Some of the Dough on Small Bread Board | Scrape Small Pieces of "Spatzle" off Wetted Board into Boiling Water. Be Careful not to get pieces too thick. | |

| Boil 5 to 7 Minutes or Until Tender. Repeat until all the dough has been used. | Test for Tenderness to Taste | ||

STEP #6 Drain, Sauté, Add Crumbs | |||

| Sauté Noodles Briefly | Add 1/2 Cup Crumbs, Stir | ||
