Spatzle (Noodles)

ASSEMBLE INGREDIENTS & EQUIPMENT

 

STEP #1 Blend Bread Crumbs & Set Aside

Blend Toasted, Dried Bread to Make 1/2 Cup Crumbs
 

 

STEP #2 Prepare Liquid Ingredients for the Dough

Pour Beaten Eggs into Large Mixing Bowl

 

STEP #3 Sift Dry Ingredients into Medium Bowl

Add 3 Cups Whole Grain Flour (as Spelt, Kamut, Wheat) 
Add 1 tsp Salt
Add 1/2 tsp Nutmeg
Sift

 

STEP #4 Combine Dry Ingredients with Eggs & Add Milk

Mix thoroughly with Whisk & Spoon
Mix to Pasty Consistency with Just Less than 1 Cup Milk. 
If too much liquid is added dough will become runny and flour will have to be added.

 

 

STEP #5
Boil Noodles in Spaghetti Cooker (Double Boiler)

Add 1/2 tsp Salt to Boiling Water
Place Some of the Dough on Small Bread Board
Scrape Small Pieces of "Spatzle" off Wetted Board into Boiling Water. Be Careful not to get pieces too thick.
Boil 5 to 7 Minutes or Until Tender. Repeat until all the dough has been used.
Test for Tenderness to Taste

 

STEP #6
Drain, Sauté, Add Crumbs

Drain 
Melt 2 Tbsp Butter
Sauté Noodles Briefly
Add 1/2 Cup Crumbs, Stir
Serve & Enjoy
