Seven Layer Salad
                  from Main Dishes       

Demonstrated by Audrey Kent, 
Riverside, California

Assemble Ingredients and Equipment

Wash Vegetables

STEP #1   Toss together in bottom of a deep salad bowl (a clear glass bowl is especially attractive):
Leafy lettuce, Ruby red Lettuce, Iceberg Lettuce, broken

STEP #2 Layer evenly over greens in order given:
Chopped green pepper
Chopped or sliced celery
Chopped green onions
Celery
Sliced radishes
Fresh or frozen peas

STEP #3   Blend together and spread evenly over peas right to the edge of the bowl, forming a seal over all ingredients: 
Nonfat yogurt and mayonnaise


STEP #4   Just before serving top yogurt-mayonnaise evenly with the cheese and garnish around the edges with remaining ingredients:
Grated Cheddar cheese
Cherry or sliced tomatoes
















Whole ripe olives
Parsley sprigs or minced parsley and paprika
Serve  
Enjoy!
