Waldorf Salad







 

 


 

  
Kailan Dunn Jr. of Naches, Washington is a 5th generation member of a Yakima Valley apple growing family.  

   We found him preparing to enjoy a Washington State University (The loyalty to this school is multi-generational in his family, too) football game on a cool Saturday October autumn afternoon. But he and his great uncle A. D. Dunn stepped out to the apple orchard to gather the freshest possible ingredients for his Waldorf Salad just before kickoff time.

Combine:


2 medium red or green apples, unpeeled chopped
2 ribs celery, chopped
1/4 cup walnuts, broken
1/4 cup raisins

Assemble Ingredients
Red or green apples, unpeeled chopped
Celery, chopped
Walnuts, broken & chopped
 Raisins
 

  Sweet Mayonnaise Dressing
            This recipe is found on page 242 of Main Dishes

Amount: 1/2 cup

Blend thoroughly with wire whisk:

1/4 cup mayonnaise
1/4 cup nonfat plain yogurt
1 1/2 teaspoon crystalline fructose or honey

1 1/2 teaspoon lemon juice

Mayonnaise
Nonfat Plain Yogurt
Crystaline fructose or honey
Lemon juice

Kailan's father and great uncle, both WSU alumni, enjoy a post game salad refresher in good spirits as the final seconds ticked off with the crimson and gray Cougars preserving a lead over the Oregon Beavers.
