Christmas Cheese Ball or Log
AMOUNT: About 3 1/2 Cups

Step #1 Thoroughly blend together in electric mixer or by hand; chill thoroughly:
   8 oz package cream cheese, softened
   2 cups (1/2 lb) grated cheddar cheese
   1/2 cup finely chopped pecans 
      (chop in blender or on cutting board by hand)
   1 small onion, drained and chopped, optional
   2 oz. jar pimiento, drained and chopped, optional
   2 teaspoons soy sauce 
   8 oz. (medium sized serving) cooked salmon, shredded 
      for special flavor

Step #2 Place parsley springs in blender (or chop on cutting board) to make:
  1 cup finely chopped parsley

Step #3  Roll cheese mixture into a ball or log and roll it in the parsley. Chill until ready to serve.

Grate Cheddar Cheese Chop Pecans  Chop Onions

Chop Pimiento Add Cream Cheese             Add Grated Cheddar Cheese
Add Onion Add Pimiento Add Soy Sauce
Add Pecans

Step #2 Place parsley sprigs in blender or chop on cutting board 
Step #3 Roll Cheese mixture into a ball or log and roll it in the parsley
